Totally Lame Picture Site!!

Here we see all of the things needed to construct tonkatsu. Since Tonkatsu is a breaded pork dish, the first thing you need, is pork. The pork you see here is some amount of a pork loin type thing that's not the tenderloin part. Hey, I'm not a butcher, I don't know the name for these things. The important thing is, it should be very lean. So trim off any excess fat before you start.

You also of course need flour, eggs, and breadcrumbs to bread the pork. To make authentic Tonkatsu you use Panko, which is a japanese style breadcrumb. I've also made this by using a food processor to make crumbs out of saltines, that works well also.
