Now all preparation has been done, so it's time to start constructing some sushi! Here we see some Dried Seaweed (for sushi).
One side of the seaweed is shiny, and one side isn't. Also, they're longer than they are wide. According to SushiChef, he randomly decides if the shiny side should be on the inside or the outside. I'd say it should be on the outside though (and hence, facing down on the mat when you roll it).
Also, depending which way you roll the sushi up, you vary how thick the rolls get. If you roll the short end, you end up with a big fat roll, whereas if you roll the long end, you end up with a thinner roll. We opted to go that way.
