At this point, I was fairly confident that we were going to be folding the two corners of this gyoza skin together to form some kind of folded shape. But no!
As it turns out, this is not, in fact, the case. Instead, you fold a little wrinkle into the skin. Who would have thought?! (besides anyone who's ever eaten a gyoza, anyway)
